RIDLEY PARK, PA — Rosemary, the crown jewel of Delaware County’s dining scene, has a new culinary maestro at the helm. George Sabatino, a veteran of the Philadelphia food industry, has taken up the mantle as the executive chef of the Ridley Park eatery.
With a résumé that includes a stint as the culinary director for Safran Turney Hospitality—owners of local favorites like Barbuzzo, Lolita, Jamonera, Bud & Marilyn’s, and Little Nonna’s—Sabatino brings a wealth of experience to his new role.
After eight months in operation, Sabatino believes Rosemary understands the palate of Delaware County. He plans to enhance the restaurant by sourcing ingredients from local farms and producers. “I’m thrilled to join the team,” Sabatino said, citing his deep respect and friendship with owner Philip Breen.
Sabatino aims to introduce a bread and fermentation program, crafting as many menu items in-house as possible. He also plans to use products from nearby suppliers, such as mushrooms from Mycopolitan in Philadelphia, dairy and meats from Lancaster-based Green Meadow Farm, and seasonal fruits from Three Springs Fruit Farm in Adams County.
A tantalizing spring menu, set to premiere in April, will feature dishes like lump crab toast with milk bread and trout roe, pork belly and sweet potatoes with chili glaze, spinach gnudi with cashew brown butter, and a sesame brioche smash burger.
Sabatino started his culinary journey in Philadelphia nearly two decades ago, working in renowned kitchens like Fork, Monk’s Café, and Ansill. He joined the Safran Turner Hospitality team in 2006 and helped open Bindi, an acclaimed Indian kitchen. During his tenure, Barbuzzo earned a James Beard nomination for Best New Restaurant in 2011. Sabatino’s first executive chef role was at Stateside on East Passyunk Avenue in 2011, which earned him the titles of “Best Chef” and “Best Restaurant in Philadelphia” by Philadelphia magazine in 2012.
Rosemary, located at 25 E. Hinckley Avenue, is open for dinner seven days a week and serves brunch on Saturdays and Sundays from 10 a.m. to 2:45 p.m. With Sabatino now steering the culinary ship, patrons can expect an exciting gastronomic journey ahead.
